Sunday lunch is a time to relax with family and friends, and a vegetarian meal can be just as tasty and satisfying as a meat-based one. Here are some easy vegetarian recipes perfect for a Sunday lunch.
Lentil and Mushroom Shepherd's Pie
This hearty dish is packed with flavour and nutrition. Saute finely chopped onion and garlic in olive oil until softened. Add mushrooms and cook until lightly browned. Add lentils, stock and herbs and simmer for 30 minutes. Pour the mixture into a baking dish and top with mashed potatoes. Bake in the oven until golden brown. Serve with a side salad.
Sweet Potato and Spinach Curry
This flavourful dish is both vegan and gluten-free. Heat a large saucepan over medium heat and add oil. Add onion and garlic and cook until softened. Add sweet potatoes, coconut milk, curry paste and spinach and simmer until the sweet potatoes are tender. Serve with cooked rice and a dollop of yoghurt.
Baked Aubergine and Tomato Risotto
This creamy risotto is easy to make and full of flavour. Preheat the oven to 200°C. Slice an aubergine into thin slices and arrange in a single layer on a baking tray. Drizzle with olive oil and bake for 20 minutes, turning once. Meanwhile, heat oil in a large saucepan and add onion and garlic. Cook until softened, then add Arborio rice and stir until coated with the oil. Pour in vegetable stock and simmer for 15 minutes, stirring occasionally. Add tomato puree and cooked aubergine and simmer for a further 5 minutes. Serve with a side salad.
